- Clarification: The juice is allowed to stand in large containers. The sediments settle to the bottom and the liquid is strained and the clear liquid is obtained.
- Concentration: The clear juice is then poured in a large, flat-bottomed pan and boiled.
Under the boiling process, the impurities are skimmed off the top, as it is continuously stirred, leaving a yellow syrup behind.
